I had the chance to try out a couple of their oatmeal. It’s one of the things that I really enjoy in the morning, especially as the season gets cold. And not only do I enjoy it in the microwave or on the stove but I love making oat muffins. Although one day I couldn’t find my muffin tin so I turned my usual muffin recipe into more of a cake-ish bread creation as you can see picture below –
This turned out AMAZING. It’s delicious with honey and butter and this time around I used Happy Oats by Bakery on Main. Why are these oats happy? Could be that they’re non GMO, preservative free, gluten-free and that’s gonna sure make me happy.
So here’s the recipe –
2 and a half cups of ground gluten free oats
1/2 a tsp of cream of tartar
1/4 a tsp of baking soda
1 egg
1 and 1/3 cup of milk (or half and half or soy)
2 tbsp of butter (or olive oil)
1/2 tsp of salt
2 tbsp of cinnamon
1 tbsp of cloves
1/4 of honey
1/2 tsp of vanilla
About a cup or so of Frozen or fresh blueberries
Preheat oven to 350. Mix together dry ingredients. Then add the milk, butter, and egg. Mix well.
I dab olive oil into pan and spread around with (clean lol) fingers to ensure this doesn’t stick. Pour mixture into square baking pan. Sprinkle generous amount of cinnamon on top. Then sprinkle on blueberries on top of mixture.
Bake for 25-30 minutes.
I love this recipe in particular because it’s so modifiable. When the fall and holiday seasons come, I think I will experiment by adding some pumpkin to this or maybe turning it into gingerbread or something.

Wow this does sound really good. I just don't like to have oatmeal as cereal in the morning, and having muffins can get repetitive, so this is just wonderful!
This recipe does seem wonderful to try. I love oats for breakfast and like to try it with different additions.
